  • 2 cups cottage cheese low-fat or fat-free
  • ¾ cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt

For the Crust:

  • 1 ½ cups graham crackers crushed
  • ½ cup unsalted butter melted
  • ¼ cup sugar

Optional Toppings:

  • Fresh berries
  • Drizzled chocolate or caramel sauce
  • Whipped cream

Instructions
 

  • Preheat the Oven: Preheat to 350°F (175°C).

Prepare the Crust:

  • Combine graham crackers, melted butter, and sugar in a bowl.
  • Press the mixture into the bottom of a springform pan.

Blend the Cottage Cheese:

  • Blend cottage cheese in a food processor until smooth.

Make the Filling:

  • Mix blended cottage cheese, sugar, eggs, vanilla extract, lemon juice, and salt in a bowl until well combined.
  • Assemble: Pour the filling over the crust and smooth the top.
  • Bake: Bake for 45-50 minutes until the edges are set and the center jiggles slightly.

Cool and Chill:

  • Cool at room temperature for 1 hour.
  • Refrigerate for at least 3 hours before serving.
